Ingredients:

'Pastry'
1. 1 kg best quality flour
2. 1/2 cup diced butter or oil
3. 2 tablespoons of baking powder
4. Cooking oil

'Filling'
1. Savoury minced beef (see recipes for Lahma mu'assaga -1 and  and Lahma Mu'assaga -2).
2. 2 Hardboiled eggs
3. Grated Hard salty cheese
4. Chopped parsley

Instructions:

1. Sift the flour, baking powder and salt together. Add the diced butter or oil and mix well.
2. Add enough water to make the pastry stiff.
3. Knead thoroughly and allow to rise in a warm place for 1 hour.
4. Roll out the pastry thinly and cut into rounds of about 10 cms in diameter.
5. Place the filling on half of the circle and fold the other half on top, pressing down firmly with your fingers.
6. Fry in oil.
7. Alternatively, brush the top of each turnover with melted butter and place on a greased baking tray
8. Bake in a preheated hot oven until crisp and golden.
